Ingredients:

For the crust:

1/2 cup Almond Flour

1/4 cup Coconut Flour

3 tbsp Coconut Oil (Melted)

2 tbsp Maple Syrup 

 

For Pumpkin Filling:

1/2 cup Nut Butter 

1/2 cup Coconut Oil 

1/3 cup Pumpkin Puree

1/4 cup Maple Syrup 

1 scoop WHEY'D Vanilla Protein 

1/4 tsp Sea Salt

 

Directions:
1. **Preheat your oven** to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
   
2. In a small mixing bowl, combine the crust ingredients. Scoop out about 1 tbsp, roll into ball and press into each cupcake liner.

3. Bake for 10-12 minutes or until edges start to slightly brown. Let crust cool completely.

4. In another bow add all of your pumpkin filling ingredients, microwave for 10-15 seconds, then stir until fully combined.

5. Pour pumpkin filling over crust layer and set in freezer for at least 2 hours. 

6. Optional: Top with a dollop of Greek yogurt or whipped cream and a sprinkle of cinnamon for an extra indulgent treat!
